All CAA graduates are welcome to take any of the informal cooking classes, at any time, FREE of charge!!

JANUARY 2010
9th Basic Breads Workshop w/ Chef Steve Mannion - $65.00 - Students will learn to work with yeast breads. Preperation will include Rolls, Focaccia, and Whole Wheat Loaf Breads
16th Baking, Layering and Icing Cakes w/ Chef Todd Champagne - $70.00 - Students will learn from an Executive Pastry Chef how to bake different types of cakes. They will then fill, layer and ice thier own "specialty" cake.
23rd Hors d'Oeuvres for Easy Entertaining w/ Chef Pablo Guerrero - $80.00 - Students will learn to create modern and simple finger foods that will impress their guests and friends. Amazing!!!!

The recreational cooking classes are regularly offered to the public. Courses include hands-on demonstration and preparation, and a three to four hour lesson. Following our format, a group meal is served as part of the evaluation and overview process. Topics include kitchen basics, regional cuisines, holiday menus, and baking and pastry techniques. Our faculty as well as guest chefs provide instruction.

WHAT TO WEAR?
Comfortable clothing and closed-toed shoes are strongly advised. Please do NOT wear sleeveless shirts or loose, baggy clothing, as you will be working in a commercial grade kitchen environment and safety is our primary concern.
Cancellation and Reservation Policy
• Payment must be received 5 days prior to the cooking class.
• Participants Under the age of 18 must have a parent present.
• 5 participants are required to make a class.
• You may cancel your reservation for a full refund if you do so at least 5 days before the class.
• Cancellations will be non-refundable if made later than 5 days prior to the class.
• If fewer than 5 people have registered, 5 days before the class, it may be cancelled.
• In such case, CAA will provide a full refund without any other liability whatsoever.
Gift Certificate Policy
• Gift Certificates are non-refundable.
• All Gift Certificates expire one year after purchase date.
Gift Certificate's are not available for purchase at this time. Please check back with us in the Spring of 2010.

Pasta...Pasta... Class September 19, 2009
Saturday I had the opportunity to take the Pasta.... Pasta class at your academy. It is not enough to say it was the best cooking class I've taken.
Chef Pablo Guerrero not only taught us some of the history of pasta, but also made the class fun with personal experiences. Whenever a question was asked he answered it completely. he cooked, we watched, learned and ate! The food was incredible; I can still taste and smell the wonderful ingredients used to create the dishes. I also discovered it's all in the sauce. I learned how to make an incredible Marinara and Pesto sauce to die for, without spending all day at the stove.
I've already priced pasta atttachments for my Kitchen Aid and I'll soon be making my own fresh pasta. I could not be more satisfied with the class and recommend your academy to anyone interested in knowing not only the basics, but the tricks of the trade. I know every attendee will be fully pleased with the classes offered by the Culinary Academy of Austin.
