Brief History

CAA was founded in 1998 in an effort to provide comprehensive culinary arts training and education through short intense programs as well as the more traditional one and two year programs. It was also important that these programs be taught in the dynamic setting of a commercial kitchen.

The two founders, Chef Steve Mannion and Glenn Mack, have over 30 years experience in the foodservice and pastry business. Chef Mannion has operated Private Affairs Catering in Austin since 1985. Mr. Mack is a culinary professional and food historian.

Together, they created CAA as a culinary arts school within an operational catering business. Fundamental kitchen skills, business acumen, and culinary history and culture are the core elements of the curriculum.
